✨Budget Meal & Back2School Sheet pan Pancakes 🥞 🌸
This breakfast is super easy to make, it’s filling, and will have yall out the door on time every morning! My kids ask for these all the time .. and I meal prep them on Sunday for the school/work week.
You can add in anything you want or have in the pantry or fridge.. don’t limit yourself to just sweet.. add savory items too just avoid the syrup in that area.
This can be turned into a higher protein meal alone as well by swapping the pancake mix for one that is higher in protein. I make my meals balanced by adding eggs and bacon or sausage on the side, but you can eat these alone❤️Are yall trying this recipe? What are you going to add to your half? Lmk😉

Mornings can be a whirlwind, especially when you're trying to get kids ready for school while ensuring they have a nutritious and exciting lunchbox. That's where I discovered the absolute magic of Sheet Pan Pancakes! These aren't just for breakfast at home; they are a game-changer for kids' lunchboxes, making meal prep a breeze and adding a fun twist to their midday meal. I used to struggle with what to pack that wasn't a sandwich every single day, and then these School Friendly sheet pan pancakes came into my life. The beauty of making them on a sheet pan is the sheer volume you can produce at once, making it super efficient for Sunday meal prepping. Once baked, you can cut them into fun shapes using cookie cutters – think stars, hearts, or even mini squares – which instantly makes them more appealing for little ones. Now, let's talk about making these perfect for lunchboxes, especially with fruit and yogurt, as my kids absolutely love this combination. To incorporate fruit directly into the pancakes, I often add blueberries, diced strawberries, or thin banana slices to the batter before baking. This infuses a natural sweetness and extra nutrients. For a vibrant lunchbox, I'll pack a small container of fresh berries, sliced melon, or grapes alongside the pancake pieces. These not only add color but also essential vitamins and fiber. Yogurt is another fantastic addition. I typically pack a small, separate container of plain Greek yogurt for extra protein, which keeps them full longer. Sometimes, I'll swirl in a spoonful of fruit puree or a tiny drizzle of honey to make it a bit more special. The kids can dip their pancake pieces in the yogurt, or enjoy it as a creamy, refreshing side. It's a great way to boost their calcium intake too! Don't forget about savory options for lunchboxes if your child isn't always into sweet breakfasts! You can easily make a batch of savory sheet pan pancakes by adding finely shredded cheese, cooked and crumbled sausage, or even a sprinkle of herbs and finely diced bell peppers to the batter. Just remember to skip the syrup for these! These savory versions are also incredibly School Friendly and make for a unique and filling lunch. When it comes to packing, I always make sure the pancakes are completely cooled before placing them in the lunchbox to prevent sogginess. For chilled lunches, a small ice pack keeps everything fresh. These Meal Prepped pancakes hold up wonderfully in the fridge for several days, and you can even freeze individual portions to grab and go throughout the month. It’s truly the easiest breakfast idea that doubles as a perfect lunch, saving me so much time and stress. Give it a try; your kids will love the variety, and you'll love the convenience!
