If you need a dinner idea! This is yummy ‼️
Onion and Peppers sliced
Small potatoes cut in half or smaller
Fresh green beans
Mix with oil and seasoning
(Italian season, garlic, salt and pep)
Mild Italian sausage on top
Baked in oven 400 until done then I chopped up the sausage in bite sizes and put it in the skillet with butter! the veggies needed to be done more but it’s good just need to adjust how I cook it 😆 I topped mine off with mustard and my hubs did hot sauce and sour cream 🙃
This easy baked Italian sausage dish is a fantastic option for busy weeknights when you want something hearty yet simple to prepare. I love how the combination of mild Italian sausage, fresh green beans, sliced onions, peppers, and halved small potatoes comes together with just a few seasonings—Italian herbs, garlic, salt, and pepper. The use of olive oil not only helps with roasting but also adds a subtle richness. One tip I learned from making this dish multiple times is to slice the vegetables fairly uniformly to ensure even cooking. Since potatoes take longer to roast, cutting them smaller than half or parboiling them briefly before mixing can help speed up the process and prevent undercooked potatoes. Additionally, starting the potatoes and green beans first and adding the peppers and onions later during baking can avoid overcooking the softer vegetables. After baking everything at 400 degrees Fahrenheit until the sausage is cooked through, chopping the sausage into bite-sized pieces before tossing them in a pan with some butter adds another layer of flavor and texture. This step helps caramelize the sausage slightly, giving a nice contrast to the roasted vegetables. To personalize the dish, try varying the condiments as well. Mustard pairs nicely with the savory sausage while some like to add a dollop of sour cream or drizzle hot sauce for a spicy kick. These finishing touches really brighten the meal and keep it interesting. Overall, this meal brings together wholesome ingredients in a way that's both nutritious and satisfying—a perfect healthy recipe for summer or any time you want a fuss-free but tasty dinner.
