Lemon Posset 🍋

Lemon Posset Recipe:
4 lemons
6 Tbsp lemon juice
Zest of 1 lemon
2 C Heavy cream
1/2 C sugar
1 tsp vanilla extract
1. Remove lemons from the rinds and juice the flesh (set aside 6 tbsp of lemon juice). Combine cream, sugar and vanilla extract into a small saucepan. Bring to a boil (Stir constantly). Reduce heat and let simmer for 2-3 minutes.
2.Remove from heat. Stir in lemon juice and zest. Let mixture cool for about 10 minutes. You will notice the mixture will start to thicken.
3. Pour mixture into lemon rinds or small ramekins.
*Optional: Add a small amount of strawberry purée to the mixture.
4. Let cool for 1 hour and enjoy!
