Being an 18-year-old mom of three, dinner time can sometimes feel like the most chaotic part of my day! Another big hit in our house is pasta night, but I try to keep it interesting. For example, they can easily help assemble mini pizzas on pita bread or English muffins. We use store-bought sauce, cheese, and their favorite toppings, and they get so excited to eat their own creations. They also enjoy helping make simple fruit skewers or stirring pancake batter for a 'breakfast for dinner' night. Even a simple meal can look more appealing with a fun plate or by arranging the food in a creative way. And for those really tough evenings, having a few pre-made components or a freezer meal ready can be a true lifesaver. I often make a double batch of lasagna or chili and freeze half for another night. That way, even when I'm completely worn out, I know a wholesome, kid-friendly meal is just a reheat away. Remember, dinner as a family should be about nourishment and connection, not stress.
