Copycat Dunkin Grilled Cheese
This is SO delicious and I swear it tastes exactly like the sandwich Dunkin used to have (which was my favorite 😭😭)
•I halved around 8 cherry tomatoes and put them middle up on a cookie sheet with aluminum foil. You’re going to drizzle the tomatoes with olive oil and season with salt and pepper. Then, I baked them for a little less than 10 minutes at 400 degrees.
•Spread butter on one side of each slice of sourdough bread and place them in pan, butter side down, over low-medium heat.
•Spread your pesto on each slice (make sure it’s not too oily so the bread doesn’t get soggy)
•I placed 3-4 slices of provolone on one slice then scooped the tomatoes onto the cheese.
•Place other slices of bread on toppings to make a sandwich
•Cook until cheese is melted and ENJOY!!
This is going to be a go-to lunch choice for me from now on! You can also add bacon if you want, and if you don’t like provolone, try mozzarella or any cheese that melts well!

I know I'm not the only one who shed a tear when Dunkin' took their grilled cheese melt off the menu! It was truly special, and after much trial and error, I've found that this copycat recipe absolutely hits the spot. But beyond just following the steps, I've picked up a few extra tips and tricks to make sure your homemade version is just as legendary – or even better! First, let's talk about that perfect golden-brown crust. The key here isn't just butter, but patience and consistent low-medium heat. Don't rush it! You want the bread to slowly toast and crisp up while the cheese inside melts into a gooey masterpiece. Using good quality butter (or even a blend of butter and a touch of mayo on the outside for extra crispiness!) makes a huge difference. For the bread, sourdough isn't just a suggestion; its slight tang perfectly complements the rich flavors of the pesto and cheese. If you can't find sourdough, a hearty artisan bread will also do, but try to avoid very thin or soft sandwich breads that might get soggy. Now, about those fillings. The original recipe calls for melted provolone cheese, and for good reason! Provolone offers a wonderfully mild, creamy melt that isn't too overpowering. But if you're a cheese lover like me, don't be afraid to experiment! A mix of provolone with a little sharp cheddar or even a touch of mozzarella can add depth. My personal tip for extra gooeyness? Grate your cheese instead of using slices; it melts faster and more evenly. The star ingredients for me are definitely the green pesto and those bright red roasted cherry tomatoes. Roasting the tomatoes concentrates their sweetness and adds a fantastic burst of flavor that cuts through the richness of the cheese. Don't skip this step – it elevates the sandwich from good to phenomenal. And for the pesto, I always aim for a fresh, vibrant one. You can even make your own if you're feeling ambitious! Thinking about making this your own? While the classic recipe is divine, there are so many ways to customize. The original article mentioned adding bacon, which is a fantastic idea for a savory kick. You could also try adding some thinly sliced ham or even a fried egg for a breakfast-for-lunch vibe. For more veggies, a thin layer of spinach or arugula added after the cheese melts can provide a fresh counterpoint. Or, if you're feeling adventurous, a sprinkle of red pepper flakes with the tomatoes adds a subtle heat. Finally, don't forget the presentation! A perfectly cut, golden-brown grilled cheese sandwich, revealing all those glorious layers of melted provolone cheese, green pesto, and bright red roasted cherry tomatoes – just like the one in that picture – makes the experience even better. Serve it alongside a warm bowl of tomato soup for the ultimate comfort meal, or a simple side salad to balance the richness. This isn't just a sandwich; it's a nostalgic trip for your taste buds, and I promise, once you try this copycat, you'll be making it again and again!
