- 1 box of orzo (way too much!! Recommend doing 1/2 box of orzo/ 1/2 cup of orzo)

Today we are using all of our leftovers to make soup. We have all come down with colds and need some good nutrients in our system. 2024 was a hard year for me, we moved, we had another beautiful baby, and I got a new job, with all these changes, I found myself not focusing on me. SO in 2025, I am doing things that make me happy! Cooking makes me happy, its my love language. You will see easy week night meals, meals for kiddos, and elaborate fun meals while I test my limits. Both my sick babies (my biggest critics) devoured this meal. Safe for one and two year olds!

... Read moreMaking a big pot of soup, especially when everyone's feeling under the weather or life just gets hectic, is truly one of my favorite things. While my Broccoli Rabe Orzo Soup is a guaranteed hit in our home, I often find myself thinking about the incredible versatility of soup. It’s amazing how a few simple swaps can transform one recipe into a whole 'different kind of soup' experience, keeping meal times exciting even on the busiest of weeks. For instance, with this Broccoli Rabe Orzo Soup, you can easily play around with the ingredients. If broccoli rabe isn't readily available or you prefer something milder, fresh spinach or even finely chopped kale wilts beautifully into the broth at the very end, adding that same nutritional boost. Sometimes, to lighten it up or when I'm out of Italian sausage, I'll use shredded rotisserie chicken – it absorbs all the delicious flavors and makes the soup feel brand new. For a quick vegetarian option, just add an extra can of cannellini beans or even some pre-cooked lentils; they add a wonderful creaminess and protein kick. And if orzo isn't what you're craving, small pasta shells, ditalini, or even broken spaghetti can be swapped in, giving the soup a different texture and feel. This kind of flexibility means I can adapt to what I have on hand, minimizing waste and maximizing flavor, turning one core 'recipe card' into many variations. Beyond just tweaking a favorite, there are so many other comforting and easy soups perfect for a busy family lifestyle. When my kids are battling a cold, nothing beats a classic chicken noodle soup – simple, nourishing, and always a winner. I also love throwing together a hearty lentil soup; it's incredibly forgiving, packed with fiber, and I can load it up with whatever veggies are lingering in the fridge. For those nights when I need something on the table in under 30 minutes, a creamy tomato soup with a side of grilled cheese dippers is my secret weapon. It feels indulgent, but it’s quick to make and universally loved by all ages, including my own little critics! To make soup-making truly stress-free, I've picked up a few tricks. Doing a little bit of prep work on the weekend, like chopping extra onions, carrots, and garlic, makes weeknight cooking so much faster. I store them in airtight containers, and when dinner time rolls around, half the work is already done. I also swear by making big batches and freezing portions. This Broccoli Rabe Orzo Soup freezes beautifully! Having ready-to-heat, homemade meals in the freezer is a lifesaver for those days when you're just too exhausted to cook but still want to provide a wholesome meal for your family. It’s like having a personal chef, but it’s just me and my trusty freezer! Cooking, especially preparing these warm and comforting soups, has truly become my love language. It’s how I nurture my family and find a sense of peace in our often-chaotic lives. Whether it's exploring variations of my go-to Broccoli Rabe Orzo Soup or trying out a completely new recipe, the joy of a homemade meal shared around the table is simply unmatched. I hope these ideas inspire you to dive into the wonderful world of soups and discover your own family favorites!
