Starbucks Potato Cheddar Chive Bites

I found this copycat recipe which you can customize with the basic ingredients. Taste amazing with ketchup or hot sauce. Just pop in the microwave for 1 min and have an instant breakfast. Ideally you can use muffin tins but I only have these to go tins and they worked fine!

1lb red potatoes – diced into 1/2” pieces

1/2 a yellow onion – large dice

1 tbsp olive oil

1/2 tsp salt

1/8 tsp smoked paprika

4 large eggs

1 cup cottage cheese

1 tsp onion powder

1 cup shredded sharp cheddar cheese

2 tbsp finely diced chives

I baked these at 300 degrees for 25 min in my air fryer which I usually heats up higher than an oven so bake time can vary.
