Plant Based on a Budget🌱 In your pan, add the following:
Avocado oil
Cooked garbanzo beans
1 small diced potato
1 small diced tomato
Brown onion
Carrot
Zucchini
Simmer sauce of your liking ( I mostly use tikka masala )
About 3 cups of pring water
Cajun seasoning & sea salt
Cover with a lid and cook on medium-low for about 15 mins or until veggies are fully cooked and sauce has thickened
Serve over quinoa or rice & top with cilantro and green onions
