Easy peasy blueberry protein muffins 🫐💪
Whipped up a quick batch of protein-packed blueberry muffins !
Here’s what I used:
✨ 2 cups Kodiak pancake mix (I used the aldi brand)
✨ 2 eggs
✨ 1 cup lactose-free milk
✨ 2 tbsp Greek yogurt
✨ 1 cup blueberries
✨ 2 scoops of protein powder
✨ A tiny drizzle of sugar-free syrup on top of each muffin once poured into tins (optional but yum)
✨ 1 tsp of stevia
Mixed it all together, poured into a muffin tin (makes 12), and baked at 350°F for about 18–20 minutes. That’s it!
Each muffin has around 84 calories and 7.6g of protein — perfect for breakfast, snacks, or tossing in a diaper bag if you’re on the go like me!! This recipe itself isn’t SUPER sweet so feel free to sweeten as you wish!
Save this for your next meal prep day! 💙

I absolutely adore these protein blueberry muffins, and honestly, a close-up shot just doesn't do them justice! Every bite is so fluffy, moist, and bursting with juicy blueberries. I've been making them for ages because they're truly so simple to whip up, and they've become my go-to for a healthy, satisfying snack or a quick breakfast on busy mornings. What makes them truly stand out is how easily you can get that perfect golden-brown top and those vibrant blueberry pockets peeking through. To get that ideal texture, I've found a few simple tricks. First, don't overmix the batter! Just combine until everything is just incorporated. Overmixing can lead to tough muffins, and we want them light and airy. Gently folding in the blueberries at the very end ensures they don't get crushed and bleed too much, maintaining those beautiful bursts of color and flavor. Sometimes, I even sprinkle a few extra blueberries on top of each muffin before baking for an even more inviting look – perfect for that "close up" appeal! Speaking of protein, I've experimented with a few different protein powders. While the recipe is versatile, a vanilla or unflavored whey protein powder works really well here, complementing the sweetness of the blueberries without overpowering them. If you prefer a plant-based option, a good quality pea protein can also work, though it might change the texture slightly, making them a bit denser. Always ensure your protein powder mixes well to avoid a grainy texture. These muffins aren't just easy + yummy, they're also incredibly practical for meal prepping. I bake a batch on Sunday, and they last me through the week, staying fresh in an airtight container at room temperature for 3-4 days, or even longer in the fridge. They're fantastic for grabbing on the way out the door, and I often toss one into my bag for an afternoon pick-me-up. Knowing each one is around 84 calories and packs 7.6g of protein (or 8g of protein as I've sometimes seen depending on the exact protein powder used, and around 8g carbs!), makes them a guilt-free pleasure that keeps me feeling full and energized. If you're looking to switch things up, these protein muffins are super adaptable. Sometimes I add a teaspoon of lemon zest to the batter – it really brightens up the blueberry flavor! A sprinkle of cinnamon or a handful of chopped nuts (like walnuts or pecans) also makes for a delicious variation. For an extra touch of sweetness without adding sugar, a few drops of vanilla extract or almond extract can elevate the flavor profile. The beauty of this recipe is its flexibility, allowing you to tailor it to your taste while still keeping it healthy and protein-rich. So, if you're like me and always on the hunt for delicious, healthy, and convenient snacks, give these protein blueberry muffins a try. They're a fantastic addition to any meal prep routine and will quickly become a household favorite. Trust me, you'll be wanting a close-up of every single one!
