Easy peasy blueberry protein muffins 🫐💪
Whipped up a quick batch of protein-packed blueberry muffins !
Here’s what I used:
✨ 2 cups Kodiak pancake mix (I used the aldi brand)
✨ 2 eggs
✨ 1 cup lactose-free milk
✨ 2 tbsp Greek yogurt
✨ 1 cup blueberries
✨ 2 scoops of protein powder
✨ A tiny drizzle of sugar-free syrup on top of each muffin once poured into tins (optional but yum)
✨ 1 tsp of stevia
Mixed it all together, poured into a muffin tin (makes 12), and baked at 350°F for about 18–20 minutes. That’s it!
Each muffin has around 84 calories and 7.6g of protein — perfect for breakfast, snacks, or tossing in a diaper bag if you’re on the go like me!! This recipe itself isn’t SUPER sweet so feel free to sweeten as you wish!
