ensalada de coditos...

Ensalada de Coditos, or elbow pasta salad, is a quintessential Puerto Rican dish that brings family and friends together. From my experience, the key to making this dish truly stand out is balancing the creaminess of the mayonnaise with the crunch of fresh vegetables like bell peppers and onions. Adding diced ham or turkey can elevate the protein content, making it a more complete meal. For extra flavor, a splash of vinegar or a squeeze of fresh lime juice adds a tangy zest that brightens the salad. This salad is incredibly versatile—it works perfectly as a side for barbecues, holiday gatherings, or even as a quick lunch. I always suggest using good-quality elbow pasta that holds its shape well and doesn’t get mushy after chilling. When preparing ahead, drain the pasta thoroughly and rinse with cold water to stop the cooking process. One tip I’ve found useful is to refrigerate the salad for several hours or overnight. This allows the flavors to meld beautifully, giving the ensalada a richer taste. You can also customize the salad by mixing in local favorites like olives or cubed cheese to match your preference. Overall, this classic comidaboricua dish embodies comfort and tradition. Whether you follow Chef Elizabeth’s exact recipe or add your own twist, the elbow pasta salad is sure to be a crowd-pleaser at your next meal.
