Greek Chicken & salad & tzatziki
I was inspired by a specific creation but sorta made it into my own
Here’s the recipe
For the chicken marinade:
4 beasts
2 teaspoons dried dill weed
2 teaspoons cumin
1 teaspoon of paprika
2 tsp garlic salt
2 tablespoons of Cut up fresh parsley
a few aorinkes of salt
A few sprinkles of pepper
1 lemon
1 cup of Greek yogurt
For the tatziki sauce:
2 tbsp lemon juice
1 cup of Greek yogurt
2 tsp chopped fresh dill
Salt
Pepper
4 mini cucumbers sliced
1 tbsp olive oil
1/4 cup crumbled feta
For the salad
1/2 onion chopped
2 Roma tomatoes chopped
1 large cucumber chopped into fours
1 tsp red wine vinegar
1 tbsp olive oil
1 tbsp lemon juice
A sprinkle of salt and pepper
1/3 cup crumbled feta
1 tsp oregano
Instructions:
1. Preheat the oven to 425
2. Mix all dry seasonings in a bowl
3. In a large bowl, add the chicken breasts and Greek yogurt and smother it on the chicken with hands (you can use gloves if you don’t wanna touch raw chicken)
4. Incorporate the dry seasonings to the chicken and yogurt mix
5. Once oven is preheated, put wax paper onto a nonstick baking sheet, and set the timer for 20 minutes.
6. Once 20 minutes is up, flip with tongs
7. In a medium bowl, add your one cup of Greek yogurt, your chopped dill, crumbled feta, and squeezed lemon juice and stir.
8 for your Greek salad add your cucumber, tomatoes, onion, and red wine vinegar, olive oil, lemon juice and stir. Then, add the oregano, salt and pepper, and crumbled feta. Stir until combined.
8. Take chicken out of the oven and slice it once cooled.
9. Keep everything in bowls for serving purposes and enjoy!
