2 cucharaditas de vainilla
1 y 1/3 tazas de leche entera
1 y 1/3 tazas de azúcar
4 cucharaditas de polvo de hornear

1 lata de leche condensada
1 lata de leche evaporada
1 barra de queso crema
5 huevos
... Read moreWhen I first tasted Angel Kiss Cake (Pastel Beso de Ángel), I was instantly hooked! It’s such a unique dessert with its incredible layers of soft sponge cake, silky flan, and a sweet milk soak, all topped with a cloud of whipped cream. It reminds me of a tres leches cake but with that extra magical flan layer. After several attempts, I’ve gathered some personal tips and tricks to ensure your Angel Kiss Cake turns out perfectly every time, just like mine.
First, let's talk about the sponge cake. The recipe calls for sifting the flour three times, and honestly, don't skip this step! It makes a huge difference in the cake's texture, giving it that airy, delicate crumb that’s essential. When you're beating the egg whites to a stiff peak – I find my stand mixer works wonders for this – make sure your bowl is super clean and free of any grease. Gently folding the whites into the batter is key; you want to keep all that beautiful air in there. Overmixing can lead to a tough cake, so mix just until combined. And remember, those baking pans need to be prepared well! Greasing and flouring ensures an easy release.
Now, onto the flan, which can sometimes be intimidating. My biggest tip for a consistently smooth and creamy flan is to blend the ingredients thoroughly, and don't forget that hydrated grenetina (gelatin)! It's what gives the flan its perfect jiggly yet firm texture. When baking the flan, always use a water bath. This helps it cook evenly and prevents it from cracking or curdling. You know it's ready when the center is just set but still has a slight wobble. Chilling it completely after baking is non-negotiable for a clean slice – patience is a virtue here!
The milk syrup is what truly brings this Angel Kiss Cake together, infusing the sponge with incredible moisture and flavor. I like to blend all the syrup ingredients until completely smooth. When assembling, don't be shy with the syrup! Pour it generously over the cake layers, especially if you plan to let it sit overnight. The longer it soaks, the more heavenly and moist your cake will be. I often make the cake and flan a day ahead, then soak and assemble the next morning.
Finally, the assembly and that beautiful decorative white frosting (whipped cream). When stacking your layers of sponge cake and flan, take your time. If your flan feels a bit delicate, you can use a plate to help invert it onto the cake. A thin layer of whipped cream between the layers adds another dimension of flavor and helps everything stick together. For the top, I love a simple, elegant layer of freshly whipped cream. You can decorate it simply with a piping bag or just spread it smoothly. For a little extra flair, sometimes I add fresh berries or a sprinkle of cinnamon. Storing the finished cake in the fridge is a must, especially with the dairy elements.
This Angel Kiss Cake isn't just a dessert; it's an experience. It's perfect for celebrations or simply indulging in a special treat. Don't be afraid to experiment with a dash of rum or a different extract in the milk syrup for a unique twist. Give this recipe a try, and I promise you'll impress everyone (including yourself!) with your baking prowess!
