PAY DE QUESO

INGREDIENTES

1 lata (300 ml) Leche Condensada

1 lata (360 ml) Leche Evaporada

2 cucharadas de vainilla

190 gr queso crema

2 huevos

300 gr harina

150 gr mantequilla

150 gr azúcar

PREPARACIÓN:

1.- Primeramente se elaborará la base para el Pay poniendo en un recipiente la harina, el azúcar, la mantequilla y agregando al final un huevo.

2.-Se mezclan los ingredientes de la base hasta obtener una masa homogénea y se deja reposar en el mismo molde donde se mezclaron por una hora. (Te

recomiendo taparlo con una servilleta húmeda para

evitar que se seque tu masa).

3.- Una vez que va reposo la masa forraremos nuestro molde para pay con ella tratando de que quede

distribuida lo mejor posible cubriendo todo el molde (que puedes engrasarla previamente untando un poco de mantequilla).

4.- Ahora licúa el queso crema, la leche condensada, la leche evaporada, la vainilla y el huevo restante.

5.- Agrega la mezcla a la base y mete tu pay al horno por un lapso de 45 min a 180C

It's not as dense as some New York-style cheesecakes, nor as light as a Japanese souffle cheesecake. It strikes a beautiful balance, making it truly a delicious slice of heaven. The recipe gives you a great start for the base, but I've picked up a few tricks over the years to ensure that perfect crust. First, don't overmix the dough! Just bring it together until it forms a cohesive ball. Overworking the flour can make it tough. Second, chilling the dough for at least 30 minutes, even after it's rested for an hour, can make it much easier to roll out and prevent shrinking in the oven. And here's a big one: if you want to avoid a soggy bottom, try blind baking your crust for about 10-15 minutes before adding the filling. Just prick it with a fork, line it with parchment paper, and fill with pie weights or dried beans. This creates a barrier and ensures a lovely, crisp base for your creamy filling. Now, for the star of the show – that luscious, creamy filling! When you're blending the ingredients, make sure your cream cheese is at room temperature. This helps avoid lumps and ensures a super smooth consistency. Don't overmix the filling once the eggs are in, though; too much air can cause cracks later. Speaking of cracks, temperature control is key. The original recipe suggests 180°C, which is perfect. But a little trick I use is to place a shallow pan of hot water on the rack below my cheesecake while it bakes. This creates a steamy environment, which helps prevent the top from cracking and contributes to that desired creamy texture. You're looking for that beautiful golden-brown top, just like in the picture, and the cheesecake should still have a slight jiggle in the center when you take it out.
