week of college meals🥦(75 hard inspo)
happy new year ! i decided this year i wanted to implement more healthy habits, so im doing the 75hard challenge (well really like medium) …. i thought id include some meals i ate this week as inspo if your trying to be healthier as well! i really want to prioritize eating lots of protein and as little sugar as possible without the pressures of tracking every macro, so this weeks menu included breakfast bowls, protein pasta, taco bowl w/ protein chips, and yogurt w/ fruit and granola as a light breakfast or snack. i ate these meals multiple times this week to minimize waste ( also something i’m trying to be better at).
i think ill do these every week as a way to stay motivated + give y’all college friendly meal ideas!!
have a happy and healthy week 🫶🏼

Hey everyone! It's so awesome you're looking into making healthy eating work for your 75 Hard journey, especially while juggling college life. I know firsthand how tough it can be to stick to a plan when your schedule is packed and your budget might be tight. But trust me, it's totally doable to fuel your body right with delicious, protein-packed meals. One thing I've found super helpful is focusing on why I'm choosing certain foods. For me, it's about sustained energy, feeling full, and avoiding that sugar crash during classes. That’s why my meals, like those tasty breakfast bowls with eggs and veggies, or hearty protein penne pasta, are always centered around a good protein source. Eggs are a lifesaver – cheap, versatile, and packed with protein. You can throw them into a scramble with whatever veggies you have on hand, like bell peppers or spinach. Speaking of protein, don't underestimate the power of lean meats. My taco bowls with ground meat are a prime example. You can cook a big batch of seasoned ground turkey or beef at the start of the week and use it for bowls, wraps, or even a quick omelet filling. Adding in corn, diced tomatoes, and a dollop of Greek yogurt instead of sour cream makes it satisfying and fresh. And for a crunchy kick, those Quest Loaded Taco flavored protein chips are a game-changer when you're craving something savory and still want to hit your protein goals. For quick breakfasts or snacks, you can't go wrong with Greek yogurt. I love an Oikos Pro yogurt cup with granola and fresh strawberries – it’s literally 20g of protein to kickstart your day or beat that afternoon slump. If you're not a big yogurt fan, cottage cheese works wonders too. College life also means being smart about your budget and time. My biggest tip? Meal prep! Cooking larger portions of ingredients like grilled chicken, quinoa, or roasted vegetables means you have components ready to mix and match for different meals throughout the week. This minimizes waste and saves precious time. Look for sales on staples like frozen berries, canned goods, and in-season produce. And don't forget about healthy fats! A slice of avocado in your taco bowl, a sprinkle of nuts in your yogurt, or a drizzle of olive oil on your pasta can keep you feeling satiated and help with nutrient absorption. It's not just about protein; it's about balanced eating. Making these healthy choices doesn't have to be complicated or expensive. It's about finding simple swaps and routines that work for your lifestyle. Remember, you're building healthier habits, and every small step counts. Keep experimenting with different combinations, find what you love, and enjoy seeing your progress!
