Yummiest of comfort foods

I love this dish. Make it all the time. It’s super simple and will fill your tummy.

1 bag frozen has browns

2 cans cream of chicken soup

1 cup sour cream

2 packages diced ham

Either sliced or shredded cheese. The more the better!

Seasonings of your choice

In a large bowl mix everything together. Put in 9x13 baking dish. Cover with foil. Bake 45 minutes to 1 hour. Uncover and bake an additional 15 minutes.

Using frozen shredded hash browns makes the prep quick, and the combination with diced uncured ham adds a savory depth without any nitrates or nitrites, which is a great plus for those mindful of additives. I usually season this with garlic powder, paprika, and a pinch of black pepper, but you can tailor it with your favorite herbs or even a little mustard powder for a subtle tang. One trick I learned is to make sure the sour cream is well mixed with the cream of chicken soup before adding the ham and hash browns — this ensures every bite is creamy and cohesive. Covering with foil while baking helps keep the moisture in, and removing the foil towards the end gives a nice golden crisp to the cheese topping. For cheese, I prefer a sharp cheddar for its bold flavor, but a mix of mozzarella and cheddar works beautifully if you want gooey stretchiness with sharpness. The recipe is quite flexible: you can swap the ham for cooked shredded chicken or skip meat entirely and add diced veggies like bell peppers or mushrooms for a vegetarian twist. I usually serve this casserole with a simple green salad or steamed broccoli to add some fresh, light contrast. It reheats well, making it perfect for leftovers the next day or meal prep. Overall, this dish embodies the essence of comfort food—easy to make, packed with flavor, creamy, cheesy, and hearty enough to satisfy any craving.

Suggestion, add left over rotisserie to it. Also maybe half cup of sour cream and maybe some cream cheese? I don't eat pork but maybe bacon? but the original looks so delicious!! I'll be making this for my kids definitely
