Shawarma!

Ingredients

For the Beef Shawarma & Marinade:

1.5 lbs flank or sirloin steak, thinly sliced against the grain

3 tbsp olive oil

3 cloves garlic, minced

Juice of 1 lemon

1 small onion, thinly sliced

Spice Blend:

1 tsp cumin

1 tsp paprika

1/2 tsp cinnamon

1/2 tsp allspice

1/2 tsp ground cloves

1/2 tsp cardamom

1 tsp salt

1/4 tsp cayenne pepper (optional)

For the Tahini Sauce:

1/2 cup tahini paste

1 clove garlic, minced

Juice of 1 lemon

Salt to taste

Cold water (as needed for consistency)

For Serving:

Pita bread or flatbreads

Sliced tomatoes, cucumbers, and pickles

Chopped fresh parsley

Instructions

1. Marinate the Beef:

In a large bowl, whisk together the olive oil, lemon juice, minced garlic, and all the dry spices (cumin, paprika, cinnamon, allspice, cloves, cardamom, salt, and cayenne). Add the thinly sliced beef and sliced onions, mixing well to coat evenly. Cover the bowl tightly and marinate in the refrigerator for at least 2 hours, or overnight for best results.

2. Prepare the Tahini Sauce:

In a small bowl, whisk together the tahini, minced garlic, lemon juice, and salt. Gradually whisk in cold water, one tablespoon at a time, until the sauce reaches your desired pourable consistency. Set aside.

3. Cook the Beef:

Heat a cast-iron skillet or large pan over medium-high heat. Working in batches to avoid overcrowding the pan, add a few pieces of the marinated beef and onions. Spread them out and cook for 3-4 minutes per side until a nice sear and caramelization are achieved. Transfer the cooked beef to a plate and cover it to keep warm.

4. Assemble the Shawarma:

Warm your pita bread. Spread a generous layer of the prepared tahini sauce on the inside, then fill with the cooked beef mixture, sliced tomatoes, cucumbers, pickles, and fresh parsley.

Roll it up and enjoy!
