Banana PB Oatmeal Cookies

I saw these on TikTok, cookwithkac posted them. Tried them out yesterday and they were very good.

I had three bananas that were getting a little too ripe, so I tripled the recipe. The recipe makes 6 cookies.

Ingredients:

1 Cup quick oats

1/4 tsp cinnamon

1/4 tsp baking powder

1/4 tsp baking soda

1 large ripe banana

1/3 Cup peanut Butter

1 Tbsp Honey

1/2 tsp vanilla

1/2 Cup chocolate chips

-Preheat the oven to 350. Line baking sheet with parchment paper. Set aside.

-In bowl mix oats, cinnamon, baking powder, baking soda, and salt, mix.

-Add the rest of the ingredients, mix well.

-Form 6 cookies (about a 1/4 cup each. I used my large cookie scoop) they don’t expand much, so you can put them close together. Bake for 14-16 minutes.

Not only do they utilize overripe bananas, but they also incorporate peanut butter, which adds healthy fats and protein. The combination of oats and chocolate chips provides a delightful texture and taste that both kids and adults will love. With basic ingredients like quick oats, honey, and vanilla, they're easy to prepare in just a few minutes. To make them even more enjoyable, consider adding nuts or seeds for extra crunch. Gluten-free oats can also be used for a gluten-free version. When baking these cookies, you'll notice they won't spread much, allowing you to bake them closer together on the baking sheet. This recipe yields six cookies, making it ideal for a quick snack or a healthy dessert. Enjoy them warm from the oven or store them in an airtight container for a guilt-free treat throughout the week. Remember, cookies like these can be modified to suit various dietary needs, so feel free to tweak the ingredients to your liking!
