S’mores Brownies
1 18.3 oz package fudge brownie mix (I use Betty Crocker, but any kind will work), mix according to package directions.
9 whole graham crackers, broken in half (18 pieces total)
2/3 cup semi-sweet chocolate chips
1 cup mini marshmallows (more or less, depending on preference)
1 Hershey’s milk chocolate bar, chopped
-Preheat the oven to 325° F and line an 8×8 baking pan with parchment paper, leaving an overhang on the sides.
-Next, place 9 graham cracker halves and 6 quarter pieces (for a total of 15) into the bottom of the pan, overlapping slightly if needed. Set aside remaining graham crackers for later.
-In a large glass mixing bowl, combine the brownie mix, water, oil, and eggs until blended. Do not overmix.
-Stir in 2/3 cup of semi-sweet chocolate chips and pour batter over the graham crackers in the pan.
-Bake for 45-50 minutes or until a wooden toothpick comes out slightly sticky. The brownies will continue to cook slightly while cooling.
-While brownies are baking, break the remaining graham cracker halves into small pieces, and chop up Hershey’s bar.
-Once brownies have baked, remove from oven, and sprinkle the top of the brownies evenly with the mini marshmallows and graham cracker pieces. While preparing, preheat the oven broiler.
-Place in the oven and broil until the marshmallows are a light golden brown and toasty. Make sure you watch carefully as, they can brown very quickly and you don’t want the marshmallows to burn.
-Remove from the oven and place on a wire cooling rack. Immediately top with the chopped up Hershey’s chocolate bar and let brownies cool for 1 hour at room temperature.
Once cooled, lift out the brownies and place on a cutting board to cut into 9 even brownie slices (or 12 smaller slices, if desired). I recommend using this knife for the cleanest cuts possible.
S’mores brownies are a delightful twist on the classic dessert, combining rich chocolaty brownies with the sweet, campfire-inspired flavor of s’mores. To make these treats, start with a quality brownie mix like Betty Crocker, which simplifies the process and guarantees a solid base. Layering graham crackers at the bottom adds a crunchy texture, while semi-sweet chocolate chips contribute to the decadence. Once the brownie batter is prepared, pour it over the graham cracker layer in the baking pan before baking. The real magic happens when the brownies come out of the oven; topping them with mini marshmallows and additional graham cracker pieces, then broiling them for a short time, creates that signature toasted marshmallow flavor. It's crucial to monitor them closely during broiling to avoid burning. After removing them from the oven, adding chopped Hershey’s chocolate enhances the overall flavor and presentation, making these brownies not only tasty but visually appealing as well. These S’mores brownies are perfect for parties, picnics, or simply as a sweet treat to enjoy at home. Serve them warm or at room temperature, and watch them disappear!
