Churro Crackers

Great snack to sit out for a gatherings or bag up in cello bags to gift. I always make things like this and bag them up to add to gifts at Christmas. This year I’m adding these churro crackers, handmade caramels, candied pecans, and chocolate dipped Oreos to gifts.

2 Cups butter (4 sticks)

2 Cups packed brown sugar

2 tsp vanilla

2 bags oyster crackers

2 tsp cinnamon

Topping:

1 cup white sugar

1 Tbsp cinnamon

-preheat oven to 350

- melt brown sugar and butter together in a pan on medium heat, bring to a rolling boil and take off of heat.

-Add 2 tsp cinnamon and 2 tsp vanilla, stir.

-Pour the brown sugar/butter mixture over the oyster crackers and stir until all are coated.

-Spread crackers onto parchment lined baking sheet or sheets depending on how big your baking sheet is.

-bake on 350 for 15 minutes and let cool for 5 minutes

-pour crackers into a big bowl, pour cinnamon sugar over top and stir until all are coated.

-Enjoy

... Read moreOkay, so I have to spill the beans on my absolute favorite, ridiculously easy snack that always gets rave reviews: these incredible churro crackers! I stumbled upon this recipe a while back, looking for something unique to bring to a holiday potluck, and ever since, they've been a staple in my kitchen, especially around Christmas. They transform humble oyster crackers into these addictively sweet, crispy, and cinnamon-spiced bites that seriously taste like a churro, but without all the frying fuss. If you’re wondering how to get them perfectly 'golden-brown' and irresistible, let me share a few of my go-to tips. First, when you're melting the butter and brown sugar together, don't rush it! Bringing that mixture to a 'rolling boil' is key. This helps create that lovely caramel base that coats every single oyster cracker so beautifully. Once it's off the heat and you stir in that vanilla and cinnamon, make sure every cracker gets a sweet, sticky hug. Seriously, I stir them endlessly in that big bowl until they're all glistening! Next up, baking! Using a 'parchment-lined baking sheet' is a lifesaver for easy cleanup, and it ensures nothing sticks. Spread those coated crackers in a single layer – overcrowding means they won't get that perfect crispiness we're aiming for. After their 15 minutes in the oven and a quick cool-down, comes the fun part: the 'cinnamon sugar' coating! Don't be shy; pour it generously over the still-warm, baked crackers and toss, toss, toss until every piece is sparkling. That warmth helps the sugar stick, giving you that authentic churro crunch. But wait, there's more! While the classic cinnamon sugar is divine, these churro crackers are super versatile. I've experimented with a few variations that are just as heavenly. For example, a drizzle of melted dark chocolate after they've cooled completely adds a sophisticated touch, or you could even sprinkle on some finely chopped pecans for an extra nutty crunch. For fall, I sometimes swap out some of the cinnamon for pumpkin pie spice – instant autumn vibes! You could even add a tiny pinch of cayenne pepper to the cinnamon sugar for a surprising sweet-spicy kick. These aren't just for eating straight from the bowl, though that's perfectly acceptable! They make the most charming homemade gifts. I love bagging them up in cute 'cello bags' tied with a ribbon, adding them to holiday baskets alongside other treats like candied pecans or homemade caramels. They also make an amazing topping for vanilla ice cream, or a delightful little treat with your morning coffee. To keep them perfectly crispy, store them in an airtight container at room temperature. But honestly, they never last long enough to worry about storage! They’re so easy to make, yet they look and taste like you spent hours in the kitchen. Give these churro crackers a try; I promise they'll become a new favorite in your snack rotation!
