If you're craving the ultimate chocolate chip cookie with a soft, gooey center and crisp edges, this recipe is a must-try. The key to achieving that perfect thick, gooey texture lies in several steps detailed here. Firstly, using cold butter cubed rather than melted or softened butter helps control the spread of the cookies during baking. The cold butter results in thicker cookies that maintain their shape better. Beating the butter until creamy before adding sugars ensures thorough mixing and a smooth dough texture. An essential ingredient here is cornstarch—just one tablespoon added to the flour and leavening mixture helps create a tender crumb structure that contributes to the soft interior. Combined with baking soda and baking powder, it balances lift and chewiness. The two sugars—packed brown sugar and white sugar—work together to provide moisture and caramel notes, enhancing flavor and texture. Using both an egg and an extra egg yolk adds richness and helps bind the dough for chewy, moist cookies. One unique step is folding in the chocolate chips by hand rather than mixing them by mixer, which preserves their shape and stops the dough from overworking. Over mixing can develop excess gluten, leading to tougher cookies, so mixing only until the dry ingredients are incorporated is critical. Freezing the scooped cookie dough for at least two hours or even overnight is highly recommended. This rest period solidifies the butter again and helps prevent excessive spreading, resulting in distinctly thick cookies. Baking at 350°F for 16-18 minutes is optimal for a baked exterior with a soft, gooey center. Removing the cookies to a cooling rack immediately prevents overbaking from residual heat, ensuring they remain perfectly chewy. This recipe is very customizable. You can adjust the amount of chocolate chips depending on your preference—more chips create pockets of melty chocolate, while less keeps the focus on the cookie dough itself. In brief, these thick gooey chocolate chip cookies combine the science of cold butter, precise mixing, the addition of cornstarch, and freezing dough to deliver bakery-style cookies at home. Whether for a special occasion or everyday treat, you’ll love how these cookies balance a crispy exterior with a delightfully gooey center every time.
