sourdough bagels

Ingredients (for dough)

🥯 150g starter

🥯 250g water

🥯 25g sugar

🥯 500g flour (I use regular but you can use bread or whatever!)

🥯 10g salt

Other ingredients

🥯 1 tsp baking soda

🥯 1 egg yolk

🥯 desired bagel toppings (cinnamon, cheese, everything bagel seasoning, etc.)

Instructions!

1. Mix starter, water and sugar with a fork

2. Add flour and salt until dough is smooth

3. Cover your dough with a damp cloth and let it rise for 6-12 hours. it should double in size!

4. Grab a cookie sheet, line with parchment & spray with olive oil

5. Divide your dough into ~100g pieces, shape into balls, and poke the hole thru the center & shape

*100g makes about 9 bagels for me. you can do bigger bagels of 110-120g if you want!

6. Cover with a damp cloth and let the dough bagels rest for 45-60 mins

*in the last 10-15 mins, bring 6-8 cups of water to a boil and add the baking soda

*prepare your egg wash

*preheat oven to 425°

7. drop in 2-3 bagels at a time for ~1 min on each side

8. let cool for a couple seconds/minutes then brush on your egg wash & add toppings! (some toppings you might want to add later on during baking or after)

9. bake for ~22 minutes or until golden brown

10. let cool then ENJOYYYYYY
