... Read moreBeyond just a recipe, baking these traditional Lithuanian Christmas Caramel Cookies, or 'Karameliniai Sausainiai' as they're known, is truly an experience. The magic lies in their delightful contrast: a crispy exterior giving way to a soft, chewy center. If you're diving into this recipe, here are a few extra tips I've picked up to ensure your cookies turn out perfectly every time. First, pay close attention to the dough. When you're adding the flour, stir vigorously until there are absolutely no lumps – this is crucial for that smooth texture. And as the dough cooks, keep stirring until it pulls away cleanly from the pot, indicating it's reached the right consistency. This ensures your cookies will hold their shape and have that characteristic chewiness. Piping is another key step for these beauties. Using a large star tip, like a #6B, not only makes them look festive but also helps create those lovely ridges that crisp up so well in the oven. Don't overcrowd your baking sheet; give each cookie enough space to expand slightly. Now, about baking: I've found oven temperatures can vary, so while 395°F for 20-30 minutes is a great guideline, keep an eye on your cookies. Some ovens might bake them perfectly at a slightly lower 350°F. Look for a beautiful golden-brown color. They should be firm to the touch on the outside but still have a slight give, promising that soft interior. And here's a pro-tip from my kitchen: once they're out of the oven, let them rest on the baking sheet for about 10 minutes before transferring them to a wire rack. This helps them set and prevents breakage. For serving, a simple dusting of powdered sugar adds an elegant touch, making them even more festive for your holiday table. They pair wonderfully with a warm cup of coffee or tea. If you're feeling adventurous, a light lemon glaze or a sprinkle of sea salt could also elevate the caramel flavor. Lithuanian Christmas baking offers a rich variety beyond just these caramel delights. You might also explore 'Kūčiukai,' small, yeast-leavened rolls traditionally served on Christmas Eve, or 'Meduoliai,' spiced gingerbread cookies that fill the home with an irresistible aroma. Each offers a glimpse into the heart of Lithuanian holiday traditions. To keep your 'Karameliniai Sausainiai' fresh, store them in an airtight container at room temperature. They tend to stay wonderfully chewy for several days, making them perfect for preparing ahead of time or sharing with friends and family during the festive season. Enjoy baking and sharing these little pieces of Lithuanian holiday joy!
