One tip I've found valuable is to make sure you peel the tough outer layer off the broccoli stalks until you reach the tender pale green core before julienning. This ensures a pleasant texture and prevents toughness in the final product. Using raw sugar or honey adds just the right amount of sweetness that balances the natural spiciness from chili flakes and gochugaru. The versatility of this ferment is incredible. I love adding it as a crunchy topping on avocado toast or mixing it into egg scrambles for an extra probiotic boost. When layered in Korean BBQ beef tacos or wrapped with fried tofu and hoisin sauce, the tangy crunch perfectly cuts through richer flavors. Mushy ferments are still safe and can be blended into sauces, but fermenting at cooler temperatures is recommended for crunchier results. Once ready, storing your ferment in the refrigerator slows fermentation and keeps it fresh.
