Muffin Tin Sicilian Brasciole

12 mini meatloaf rolls stuffed with prosciutto, spinach & mozzarella. 20 minute bake. Meal-prep freezer tip below.

To freeze before baking:

After assembling the rolls in the muffin tin, place the tin in the freezer for 1–2 hours until the rolls are firm. Remove the frozen rolls from the tin, wrap each individually in plastic wrap, then place in a freezer‑safe bag or container. Freeze for up to 3 months.

To bake from frozen: Place frozen rolls in a greased muffin tin (no need to thaw). Bake at 350°F for 30–35 minutes, or until internal temperature reaches 160°F. Add the mozzarella topping during the last 3 minutes.

To freeze after baking:

Let the baked rolls cool completely. Wrap each roll tightly in plastic wrap and then foil, or place in an airtight container. Freeze for up to 3 months.

To reheat from frozen: Thaw overnight in the refrigerator, then warm in a 350°F oven for 10–15 minutes (or microwave in 30‑second bursts). Top with fresh marinara sauce before serving. #easyrecipe #italy #brasciole #food #foryou

... Read moreMaking Sicilian Brasciole in a muffin tin is a fantastic way to enjoy this traditional Italian dish in a convenient, portion-controlled manner. I've tried this recipe multiple times, and one of the biggest advantages is the ease of meal prep and freezing options. The combination of ground chuck, fresh spinach, and thinly sliced prosciutto creates a flavorful, moist meatloaf roll that's elevated by the gooey mozzarella topping. When preparing these rolls, using parchment paper to help with rolling the meat mixture ensures a neat, tight seal, so the fillings stay inside during baking. Preheating the oven to 350°F and baking the rolls for 20-25 minutes, then adding the mozzarella for a few minutes, results in perfectly cooked, cheesy-topped mini brasciole. For those who like to plan ahead, freezing before baking is a game changer: assembling the rolls in the muffin tin, freezing until firm, then wrapping individually allows you to bake fresh rolls straight from the freezer—a convenient weeknight solution that doesn't sacrifice flavor or texture. Baking from frozen requires a slightly longer time (30-35 minutes), but it's worth it for that freshly baked taste. Alternatively, freezing after baking also works well. Just cool completely before wrapping to prevent freezer burn. Reheating thawed rolls in the oven brings back their original deliciousness, and topping with marinara sauce adds a lovely tangy contrast. In addition to being delicious, this recipe is versatile—try swapping mozzarella for provolone for a different cheese profile or adding herbs like basil or thyme for an aromatic twist. Serving these rolls alongside cooked pasta and marinara makes a complete, satisfying meal. Overall, using the muffin tin trick simplifies presentation and portion sizes, making Sicilian brasciole accessible for busy cooks wanting authentic flavors and easy storage. Try it out for a crowd or as freezer-friendly meal prep for busy days—you won't be disappointed!
