Don’t waste sourdough discard! Do this instead🫙🫓
There are many recipes you can make with sourdough discard, but one of my favorites and the easiest are “flatbreads”. 🫓
It’s not only tasty, but healthy and good for your gut too!
Steps:
1. Oil and heat up a pan (I like to use olive oil)
2. Add a thin layer of discard to the heated pan
3. Season!! (you can use any seasonings; my favorites are black pepper, red pepper, garlic powder, and herbs)🌿🧂 4. Flip after about 1-2 minutes depending on how crispy you want them. Btw they cook fast!
5. Serve with whatever you like!

I absolutely love making sourdough discard flatbreads, and if you're like me, you're always looking for delicious ways to use up that extra discard! What started as a simple experiment in my kitchen has become a weekly staple, not just because it's incredibly easy, but because it’s genuinely healthy and good for my gut. If you've only made the basic version, let me share some tips and tricks I've learned to make them even better and more versatile. First off, don't be afraid to get creative with your seasonings! While the article mentions black pepper, red pepper, garlic powder, and herbs, I often reach for a mix of salt, pepper, and garlic powder as a base. But imagine adding a sprinkle of everything bagel seasoning for a savory kick, or even a pinch of dried oregano and basil for an Italian twist. You can also mix finely chopped fresh chives or dill directly into your discard before pouring it onto the pan. The possibilities are endless, and it’s a fantastic way to personalize each batch. When it comes to cooking, getting that perfect texture is key. The original post mentions to oil a pan (I use olive oil) and heat it up. I’ve found that using a good non-stick griddle or cast-iron pan works wonders. Ensure your pan is properly heated before you *spoon discard on hot pan like pancakes*. This helps achieve that beautiful golden-brown crispiness. Remember, you want a thin layer of discard for the best results – too thick, and it might not cook through evenly or get as crispy. And truly, they cook fast! Keep an eye on them, as they can go from perfectly golden to burnt in a flash. My rule of thumb is usually 1-2 minutes per side until I see those little bubbles form and the edges start to crisp up before I flip them. Now for serving – this is where the Yummy! factor really comes in! While the article suggests serving with "whatever you like," I have some personal favorites. These flatbreads are phenomenal as a base for mini pizzas (just add sauce, cheese, and toppings!), or as a dipper for hummus, guacamole, or a creamy yogurt dip. I've even used them as a quick wrap for leftover grilled chicken and veggies, making for a super easy and healthy lunch. For a breakfast twist, try them with a fried egg and a dash of hot sauce. The slightly tangy flavor of the sourdough really complements a variety of toppings. Beyond just being a tasty snack, let's talk about the gut health aspect. Sourdough discard, even though it's not as active as a full starter, still contains beneficial bacteria from the fermentation process. Incorporating it into your diet can contribute to a more diverse gut microbiome, which is linked to improved digestion and overall well-being. So, you're not just preventing waste; you're nourishing your body! Finally, if you happen to have any leftover flatbreads (which is rare in my house!), they store well in an airtight container at room temperature for a day or two, or in the fridge for up to four days. A quick reheat in a toaster oven or a warm pan will bring back their crispiness. Don't let that sourdough discard go to waste – it's a hidden gem for quick, healthy, and delicious meals!
