Day 2: Plum & Pistachio Crisp
Day 2 of cooking my way through Alison Roman’s book “Dining In,” so you don’t have to (but you should).
Hindsight is 20/20. If I had known this entire recipe would only last less than a day before disappearing, I would have purchased 3x the plums 😅 a juicy, jammy stone fruit crisp is no match for roommates trickling in at 2am after a Saturday night out.
4.8/5 - I only dock the points because I was without cardamom so I opted for a Madagascar vanilla plum crisp over the spiced version. This is entirely user error. A result of my laziness. I feel positive that this is a 5/5 recipe.
Topping:
Flour, light brown sugar, cardamom, salt, butter, shelled pistachios (chopped)
Filling:
4 pounds red plums, black plums and or apricots, sugar, corn starch, lemon juice.
Notes:
I used significantly less sugar than what the recipe called for. I tasted my plums beforehand and found them to be syrupy sweet and perfectly ripe. I also used brown sugar for both the topping and filling rather than white sugar for the plums.
