Steak & Veggie Basmati Bowl with Green Herb
Golden Steak & Veggie Basmati Bowl with Green Herb Sauce
Serves: 2–3 bowls
Total time: ~40 minutes
🧺 INGREDIENTS
Steak
1–1¼ lb steak (sirloin, NY strip, or ribeye)
1 tbsp olive oil
1 tsp kosher salt
½ tsp black pepper
1 tsp garlic powder
1 tsp smoked paprika
Optional: ½ tsp dried oregano or thyme
Golden Basmati Rice
1 cup basmati rice, rinsed
1 tsp olive oil or butter
½ tsp ground turmeric
2 cups low-sodium chicken broth (or water)
½ tsp salt
Optional: ¼ tsp garlic powder + onion powder
Grilled / Roasted Vegetables
1 cup asparagus or green beans
1 cup mushrooms (halved)
1 cup cherry tomatoes
1 cup corn (fresh or frozen)
1 small zucchini, sliced
1½–2 tbsp olive oil
Salt & pepper
Garlic powder (optional)
Green Herb Sauce (Chimichurri-Style, No Avocado)
1 cup fresh parsley
½ cup fresh cilantro
3 cloves garlic
2 tbsp red wine vinegar or lemon juice
⅓ cup olive oil
Salt & pepper
Optional: pinch of red pepper flakes
👩🏽🍳 INSTRUCTIONS
1️⃣ Cook the Golden Rice
Rinse basmati rice until water runs clear.
Heat oil/butter in a saucepan over medium heat.
Add rice + turmeric. Stir 30–60 seconds until rice turns golden.
Add broth, salt, and optional seasonings.
Bring to a boil → cover → reduce to low.
Simmer 12–15 minutes until liquid is absorbed.
Turn off heat, rest 5 minutes, fluff with fork.
2️⃣ Make the Green Sauce
Add all sauce ingredients to a blender or food processor.
Pulse until slightly chunky (not smooth).
Taste and adjust salt or acid.
Chill until ready to serve (flavor improves).
3️⃣ Roast or Grill the Vegetables
Oven method (easiest):
Preheat oven to 425°F.
Toss all veggies with olive oil, salt, pepper.
Spread on baking sheet.
Roast 18–22 minutes, stirring once, until lightly charred.
OR stovetop/grill pan:
Cook in batches over medium-high heat until tender with char.
4️⃣ Cook the Steak
Let steak sit at room temp 10–15 minutes.
Rub with olive oil and all seasonings.
Heat skillet or grill pan very hot.
Cook:
3–4 min per side → medium-rare
4–5 min per side → medium
Rest steak 5–10 minutes, then slice against the grain.
🍽️ ASSEMBLE THE BOWL
Add ½–¾ cup golden basmati rice to bowl.
Top with sliced steak.
Add roasted veggies generously.
Spoon 1–2 tbsp green herb sauce on top or serve on the side.
