Crispy Beef Pocket Casserole

Ingredients:

Beef Filling:

1 lb ground beef

1 yellow onion, diced

4 garlic cloves, minced

1 tbsp chili powder

1 tbsp cumin

2 tsp garlic powder

2 tsp paprika

1 tsp onion powder

1 tsp oregano

1 tsp salt

1 tsp black pepper

2 tbsp tomato paste

1/2 cup beef broth

1/2 cup red bell pepper, diced

1/2 cup green bell pepper, diced

1/2 cup corn

Pockets:

Burrito-size flour tortillas

Mozzarella cheese

Garlic Butter:

3 tbsp butter, melted

2 cloves garlic, minced

1 tsp dried parsley

Instructions:

Heat a skillet over medium heat and cook the diced onion and garlic until softened. Add the ground beef and cook until browned.

Add the chili powder, cumin, garlic powder, paprika, onion powder, oregano, salt, and pepper. Mix together, then add the tomato paste and combine.

Pour in the beef broth and let it simmer until the liquid cooks into the beef. Add the bell peppers and corn and mix everything together.

Dip each tortilla in water, then cut them in half.

In the center of each tortilla half, layer mozzarella cheese, beef filling, and more mozzarella cheese.

Fold into a triangle pocket.

Mix the melted butter with garlic and parsley.

Brush some garlic butter on the bottom of a circular baking dish, place the pockets seam-side down, and then brush more butter over the tops.

Bake at 400°F for 15–20 minutes or until golden. Switch the oven to low broil and cook an additional 2–3 minutes to crisp the tops.
