Cook Time: 25 minutes
Total Time: 40 minutes
Servings: 6
Ingredients
1 lb raw shrimp, peeled, deveined, tails removed, and chopped
8 oz lump crab meat, drained and checked for shells
3 tbsp butter
1 small onion, finely diced
2 celery stalks, finely diced
2 garlic cloves, minced
2 tbsp tomato paste
2 tbsp all-purpose flour
3½ cups seafood broth
1 tsp Old Bay seasoning
½ tsp paprika
Pinch of cayenne, optional
1 cup heavy cream
1 cup half-and-half
⅓ cup finely grated Parmesan
1 tbsp fresh lemon juice
Salt and black pepper, to taste
2 tbsp chopped parsley
Instructions
1️⃣ Melt the butter over medium heat. Cook the onion and celery for 5–6 minutes until soft.
2️⃣ Add the garlic and tomato paste; cook for 30 seconds. Stir in the flour and cook for 1 minute.
3️⃣ Slowly whisk in the seafood broth. Add Old Bay, paprika, cayenne, and black pepper.
4️⃣ Simmer gently for 10 minutes. Blend briefly with an immersion blender for a smoother bisque, if desired.
5️⃣ Reduce the heat to low. Stir in the cream and half-and-half. Warm gently without boiling.
6️⃣ Add the raw shrimp and cook for 2–3 minutes, just until opaque and loosely C-shaped.
7️⃣ Fold in the crab and warm for 1 minute.
8️⃣ Remove from the heat. Stir in the Parmesan, lemon juice, and parsley. Add salt only if needed.
