Recipe Right Here❤️⬇️

Ingredients

- [ ] 6 strips bacon cut into small pieces

- [ ] 2 (9 ounce) packages refrigerated cheese tortellini

- [ ] 1/2 cup low sodium chicken broth

- [ ] 1 tablespoon ranch seasoning

- [ ] 1/2 cup heavy/whipping cream

- [ ] 4 ounces cream cheese (1/2 block of Philly) softened

Instructions

* Make the cream cheese is very soft (put in microwave for 30 secs)

* Boil a large, salted pot of water for the tortellini. Start cooking the tortellini once the bacon is done

* cut the bacon into small pieces and cook until crispy (about 10 minutes).

* Take the pan off the heat and remove the bacon to a paper towel lined plate. Drain most of the bacon fat from the pan (keep about 1 tablespoon in there).

* Return the pan to the burner (medium heat). Stir in the chicken broth and ranch seasoning and whisk until it’s dissolved, then stir in the cream and cream cheese. Keep stirring until you’ve got a smooth sauce and it’s thickened up a bit (about 5 minutes). It’s not a super thick sauce, but it will thicken even more as it cools.

* Add sauce to the tortellini’s and then add the bacon mix together and serve immediately

... Read moreOkay, so you've got the basic Bacon Ranch Tortellini recipe down, right? But let me tell you, this dish is so much more than just a recipe – it's a lifesaver on busy nights and a guaranteed crowd-pleaser! I've made this countless times, and I've picked up a few tricks along the way to make it absolutely perfect every single time. First off, let's talk about the bacon. While the recipe says to cut it into small pieces, I sometimes like to render whole strips first, then crumble them. This gives you some bigger, satisfyingly crispy bits. And don't be afraid to experiment with different bacon types – a smoky applewood bacon can really elevate the flavor! Just be sure to drain most of that fat; a tablespoon is enough to carry that delicious bacon flavor into your sauce without making it greasy. That mention of "Bacon Panch Tortellini" in the OCR actually reminded me of how versatile this dish is, making me wonder if "Panch" was a secret ingredient! (Just kidding, but it shows how creative you can get!) For the tortellini itself, the key is not to overcook it. Seriously, keep an eye on it! Al dente is your friend here. Overcooked tortellini can get mushy, and we want those lovely cheese pockets to hold their shape and texture. If you're using fresh tortellini, it cooks super fast, so be ready. Now, for that incredible creamy sauce! Making sure your cream cheese is really soft is crucial. If it's still a bit firm after microwaving, whisk it into the warm chicken broth and ranch seasoning mixture off the heat first, breaking it down with the whisk, before adding the heavy cream. This helps prevent any lumps. I’ve found that a good quality ranch seasoning makes all the difference – some are definitely better than others! If you want to add a little zing, a tiny pinch of garlic powder or onion powder can deepen the savory notes. Level Up Your Bacon Ranch Tortellini! Add some greens: Stir in a handful of fresh spinach or a cup of frozen peas (thawed) at the very end when you combine the sauce and tortellini. The residual heat will cook them perfectly. It's an easy way to sneak in some veggies! Extra protein boost: Have some leftover cooked chicken? Shred it and toss it in with the sauce. Cooked sausage (like Italian sausage for a kick!) also works wonderfully. Cheesy topping: A sprinkle of freshly grated Parmesan or a blend of Italian cheeses just before serving takes it to another level of deliciousness. Spice it up: If you like a little heat, a pinch of red pepper flakes mixed into the sauce can give it a lovely warmth. What to Serve With It: This Bacon Ranch Tortellini is pretty rich on its own, so I often pair it with something light. A simple green salad with a vinaigrette dressing is perfect for cutting through the creaminess. Garlic bread is always a hit, of course, because who doesn't love soaking up extra sauce? Steamed green beans or broccoli are also great, healthy sides. Meal Prep & Leftovers: This dish makes fantastic leftovers! Store it in an airtight container in the fridge for up to 3-4 days. To reheat, I usually add a splash of milk or chicken broth to a pan on the stovetop over medium-low heat, then gently warm the tortellini, stirring occasionally. This helps bring the sauce back to its creamy consistency. While it's best fresh, it reheats beautifully for a quick lunch the next day. I haven't tried freezing it, as dairy-based sauces can sometimes separate, but it really doesn't last long enough in my house to even consider freezing!
