Tostadas de Jaiba (imitation crab)🦀

These always hit the spot and they are so easy to make!

1 - 1 1/2 lb imitation crab

1/4 onion

1/2 bunch of cilantro

Half a cucumber

Juice from 1 orange (I usually use 1/3 cup of Tampico orange juice, but I ran out)

Lots of ketchup (about 1 1/2 cups)

I like to add mayo to my tostada but you don’t have to. I know lots of people usually make this with Clamato juice, but I hate Clamato juice, and this is how my family has always made it ☺️

... Read moreI absolutely love how simple and satisfying these Tostadas de Jaiba are, especially when I need an 'easy lazy lunch' that doesn't compromise on flavor! My family’s recipe has been a staple for ages, and I'm so excited to share more tips and tricks to make yours just as perfect. First, let's talk about 'jaiba.' In Spanish, 'jaiba' means crab. While traditional Tostadas de Jaiba use real crab meat, I've found that imitation crab works beautifully for a quick, budget-friendly, and equally delicious version. It's readily available, easy to flake, and its mild flavor absorbs all the zesty, savory goodness of the sauce we create. When selecting imitation crab, look for brands that have a good texture – not too rubbery – and are well-sealed. Now, about the sauce! Many recipes call for Clamato juice, but like I mentioned, it's just not my thing. My family's secret is using a combination of orange juice and ketchup, which creates this incredible sweet, tangy, and savory base. You can definitely use freshly squeezed orange juice for an even brighter flavor, or a high-quality store-bought option. If you want to experiment, a splash of fresh lime juice can also add an extra layer of zing! Don't be shy with the ketchup; it's essential for that rich color and depth of flavor. The beauty of these tostadas is how customizable they are. Beyond the onion, cilantro, and cucumber, which add amazing freshness and crunch, you can easily add other veggies. Diced ripe tomatoes can bring a lovely sweetness and juiciness. For those who love a bit of heat, finely minced serrano or jalapeño pepper would be a fantastic addition – start with a small amount and adjust to your spice preference. And, of course, a generous scoop of diced avocado right before serving is always a winner; it adds a creamy texture that perfectly complements the crunch of the tostada. Speaking of creaminess, I always add mayo to my tostadas, and I highly recommend it! It binds everything together beautifully and adds a rich, smooth element. If you're not a fan of regular mayo, try a light aioli or even a dollop of Mexican crema for a slightly different, but equally delicious, experience. When it comes to assembly, timing is key to prevent soggy tostadas. I like to mix my 'jaiba' salad ahead of time and keep it chilled. Then, right before serving, I'll spread a layer of mayo (if using) on the tostada, pile on the imitation crab mixture, and add any fresh garnishes like extra cilantro, a few avocado slices, or a sprinkle of cotija cheese. A final squeeze of fresh lime juice really brightens everything up! These are perfect for a casual get-together or as a satisfying solo meal. They really do hit the spot every single time, proving that delicious, authentic-tasting Mexican food can be incredibly simple to whip up, even for the laziest of lunch days.
