Oh my goodness, you guys! If there's one dish that truly transports me straight to the vibrant streets of Mexico, it's Flautas Ahogadas. I recently perfected my recipe for these incredible 'drowned flautas,' and I just had to share it with you all. Forget everything you thought you knew about crispy tacos because these take it to a whole new level! Growing up, Flautas Hogadas were a special treat in my family. The combination of perfectly crisp, rolled tortillas filled with savory goodness, all swimming in a rich, flavorful sauce... it's pure comfort food magic. I know some of you might be thinking, 'drowned tacos?' But trust me, the sauce softens the flautas just enough to absorb all that amazing flavor without making them soggy. It’s an art! Here's a peek into how I make my favorite version. I usually go for a shredded chicken filling, but potato or beef are fantastic too. My Go-To Flautas Ahogadas Recipe: What you'll need: For the Flautas: 1 lb boneless, skinless chicken breast or thighs, cooked and shredded (or 3-4 medium potatoes, boiled and mashed) 1/2 onion, finely chopped 2 cloves garlic, minced Salt and pepper to taste 12-15 corn tortillas Vegetable oil for frying For the Ahogada Sauce: 4-5 ripe Roma tomatoes 2-3 chiles de árbol (or 1 serrano for less heat), stems removed 1/4 onion 1 clove garlic 1 cup chicken broth or water Salt to taste A pinch of cumin (my secret touch!) Toppings (the fun part!): Shredded lettuce or cabbage Crumbled cotija cheese or feta Crema Mexicana or sour cream Sliced radishes Avocado slices or guacamole Let's Get Cooking! Prepare the Filling: Sauté the chopped onion and minced garlic until fragrant. Add the shredded chicken (or mashed potato) and season with salt and pepper. Cook for a few minutes to let the flavors meld. Set aside. Warm the Tortillas: This is crucial! Briefly warm your corn tortillas in a microwave or on a dry griddle. This makes them pliable and prevents them from breaking when you roll them. Roll and Fry the Flautas: Place a spoonful of filling near one edge of a warm tortilla. Roll it up tightly into a cigar shape. Secure with a toothpick if needed (I usually don't, but it helps beginners!). Heat about 1 inch of oil in a skillet over medium-high heat. Fry the flautas in batches, seam-side down first, until golden brown and crispy on all sides. Drain on paper towels. Make the Ahogada Sauce: In a pot, boil the tomatoes, chiles, onion, and garlic until the tomatoes are soft. Carefully transfer everything (including some of the cooking water) to a blender. Add chicken broth, salt, and cumin. Blend until silky smooth. Strain the sauce through a fine-mesh sieve into a clean pot (optional, but gives a smoother sauce). Simmer for 10-15 minutes, allowing it to thicken slightly and flavors to deepen. Taste and adjust seasoning. Assemble and Serve: Arrange a few crispy flautas on a plate. Ladle a generous amount of the warm ahogada sauce over them, ensuring they are nicely 'drowned.' Top with shredded lettuce, cotija cheese, crema, and avocado. Serve immediately and prepare for happy sighs! My Personal Tips for the Best Flautas Ahogadas: Don't skimp on warming the tortillas: Cold tortillas will crack. Fry until truly golden: That crispiness is key before they meet the sauce. Adjust chili heat: If you love spice, add more chiles de árbol or even a touch of habanero.
