Chocolate Pistachio Cranberry Sourdough

This loaf was made at an 80% hydration and bulk fermented for 6 hours on the counter and 9 hours in the fridge.

This was my first time working at such a high hydration and I was getting very worried even when it was baking but it came out so delicious, soft, nice crust, flavorful- probably one of my best loaves yet!
