My favorite meals this week

Meal 1: Chicken thighs I marinated with jerk style/chimichurri seasonings and sauce🧂 the salad was an idea from wishbonekitchen on insta. She made a lemon arugula and orzo salad but I had rice on hand and followed the rest of her recipe. I honestly fell in love with this salad recipe so much I plan on making it more often this summer ☀️🍋

Meal 2: So I made burgers but forgot to buy buns hahaha so here we are with a sandwich spread across the plate. I added pepper, relish and mayonnaise to my spinach/arugula. I love siracha ketchup on my fries🍟 and that’s spicy southwest mustard on that patty 🌶️🤠🐄

Meal 3: stripped steakhouse seasoned steak paired with sweet potato halves topped with arugula, goat cheese, dates and pecans. I tweaked this recipe as well but came across the same flavors noted. They originally used feta cheese, balsamic/tahini dressing but I don’t like either of those so I chose a honey goat cheese and woowwww it was so sweet. Very amazing meal!!! 😁🍠

Let me know anything else you’d like to know about my diet choices and journey🫶😚

... Read moreLooking for fresh dinner ideas? This week, I tried some delightful recipes that made my meals unforgettable! 1. **Jerk Chicken with Lemon Salad**: I marinated chicken thighs using jerk and chimichurri spices, paired with a lemon arugula salad. Instead of orzo, I used rice, giving it a satisfying twist. This salad is perfect for summer and can be adapted with various grains like quinoa for added nutrition. 2. **Burger Platter Without Buns**: When I forgot the buns for my burgers, I got creative! I turned it into a plate of deliciousness with a grass-fed beef patty, sprinkled with pepper and topped with southwest mustard. Pairing it with homemade spicy Sriracha ketchup and crispy fries made it a hit! 3. **Steak and Sweet Potato**: Treat yourself to a delectable stripped steak seasoned just right. I combined it with sweet potatoes, enhanced with arugula, goat cheese, and crunchy pecans, for a sweet and savory explosion of flavors! Using honey goat cheese instead of feta offers a subtle sweetness that rounds out the dish beautifully. These meals not only rekindle my love for cooking but also inspire you to try new combinations. Let me know if you're interested in more details about any recipe or if you have your own meal innovations to share!
