Mix chopped bacon or turkey sausage for a leaner version.
Mix eggs seasoned with salt and pepper, and pour in greased or lined muffin tins, over the meat. I sometimes add a bit of blended cottage cheese for a fluffier egg bite.
Top with shredded cheese and bake at 350 for 20-30 minutes!
You can add in chopped peppers or any other veggies. These freeze very well. Thaw overnight in the fridge.
Breakfast is often described as the most important meal of the day, and what better way to start it than with homemade egg bites? These little creations are not only easy to make but also customizable to fit various tastes and dietary needs. Begin by preheating your oven to 350°F (175°C). Grease or line muffin tins to prevent sticking. You can use a variety of proteins like chopped bacon or turkey sausage depending on your preference. The egg mixture can be tailored to your liking. Using eggs seasoned with salt and pepper as a base, consider adding blended cottage cheese for a fluffier texture or incorporating chopped vegetables like bell peppers and spinach for added nutrients. Furthermore, you can top them with shredded cheese for that extra comfort and indulgence. Once prepared, pour the egg mixture into the muffin tins, ensuring not to overfill as they will expand while baking. Bake for 20-30 minutes until they are firm and lightly golden on top. The flexibility of these egg bites allows for variations; experiment with different ingredients to create your ideal breakfast treat. Not only are these egg bites delicious, but they also freeze well. After cooling, simply place them in a freezer-safe container, and they can last for up to 2-3 months. When you're ready to enjoy, thaw them overnight in the fridge for a quick meal in the morning. These homemade egg bites are a fantastic way to enjoy a healthy breakfast tailored to your taste and convenience!
