Quesadillas with leftover meat!

I grilled fajita seasoned chicken and beef for fajitas, and wanted something different tonight. I sautéed onion and bell peppers, and mixed with diced up chicken and beef. Cooked in a cast-iron skillet in a flour tortilla with some sprinkled cheese for a delicious quesadilla! Top with sour cream if desired. This would also be good sprinkled on top of nachos!

Not just limited to fajita-style meat, you can experiment with various proteins like pulled pork, shredded chicken, or even veggies. Start by preheating your cast-iron skillet over medium heat, and prepare your tortillas. Fill them generously with your leftover seasoned meat, sautéed vegetables, and your choice of cheese — cheddar, Monterey Jack, or mozzarella work wonderfully. Assembling the quesadilla is straightforward: layer the ingredients on one half of the tortilla, fold it over, and cook until golden brown and crispy, about 3-4 minutes on each side. To enhance the flavor, consider adding spices such as cumin or smoked paprika, or garnishing with fresh herbs like cilantro. Don't forget the condiments! A dollop of sour cream or guacamole can elevate your dish to a whole new level. This meal is not only customizable but also quick, making it ideal for busy weeknights. Plus, you can easily make a larger batch to share with family or friends.
