Quesadillas with leftover meat!
I grilled fajita seasoned chicken and beef for fajitas, and wanted something different tonight. I sautéed onion and bell peppers, and mixed with diced up chicken and beef. Cooked in a cast-iron skillet in a flour tortilla with some sprinkled cheese for a delicious quesadilla! Top with sour cream if desired. This would also be good sprinkled on top of nachos!
