Homemade chicken piccata!!

Butterfly 2 chicken breasts. Sprinkle with salt, pepper and garlic, then coat with flour and cook in skillet with 1 T olive oil and 2 T butter, 5 minutes in each side until brown

Then add 3/4 cup chicken broth, juice of 1 lemon, and zest of 1 lemon. Cook sauce for about 5 minutes. (I did not have capers or heavy cream, so I left them out and just used broth). Served over angel hair pasta.

... Read moreChicken piccata is a classic Italian-American dish that is known for its bright, tangy flavor and tender chicken. Traditionally, the dish is made with capers, which add a savory note to the creamy lemon sauce. However, you can easily adapt the recipe based on what's available. To elevate the flavor, consider marinating the chicken in lemon juice and herbs like thyme or parsley before cooking. This will infuse the meat with flavor and enhance the overall dish. Additionally, if you have heavy cream, adding a splash can create a richer sauce that balances out the acidity of the lemon juice. For sides, a simple green salad or steamed vegetables pair nicely with this dish. To add a gourmet touch, garnish with fresh parsley or lemon slices just before serving. Chicken piccata is perfect for a cozy family dinner or an impressive meal to serve guests. Don't forget, experimenting with the ingredients gives your own twist on this well-loved dish!
