Italiano Stuffed Bell Peppers

Ingredients:

3-4 Bell Peppers (Your choice of color)

1lb of hamburger (can be substituted with ground turkey, chicken, pork, sausage, meat substitute etc)

1 28oz can of diced tomatoes

1 small yellow onion

2 tbs of minced garlic

2 cups cooked rice (can be substituted with veggie rice)

2 tbs Italian seasoning

1 jar marinara

2 cups shredded cheese of your choice

Directions:

-Slice tops off an de-seed peppers

-Bring pot of water to a rolling boil, place cleaned peppers into water and blanch for about 5 minutes.

-Dice onion while waiting

-Cook rice according to package instructions (I used a rice cooker to save myself time)

-Remove peppers from boiling water and dump out water, place peppers in casserole dish.

-Brown hamburger meat with seasoning of your choice, I used season salt. When hamburger is almost browned add diced onion and garlic. Finish browning the hamburger then drain.

-Add diced tomatoes and Italian seasoning to browned hamburger, onions, and garlic.

-When rice is cooked, add to hamburger mixture.

-Spoon hamburger/rice mixture into peppers until slightly over full.

-Pour marinara into bottom of casserole dish around peppers

-Top everything with cheese

-Cover with aluminum foil loosely and bake at 350 for 25 minutes

-Remove foil and continue baking for another 10 minutes to melt and brown cheese.

-Serve over remaining hamburger/rice mixture and spoon marinara on top of entire dish.
