Let me tell you, discovering the magic of these easy steak and potato foil packs, which I also like to call my 'steak pockets,' totally changed my dinner game! Seriously, if you're looking for a super simple, incredibly flavorful, and ridiculously easy-cleanup meal, this is it. It’s perfect for those busy weeknights when you just want something delicious without all the fuss. One of my favorite things about these steak pockets is how versatile they are, especially when it comes to seasoning. While the recipe suggests seasoning to your liking, I've found a few tricks that really elevate the flavor. Don't be shy with your spices! Besides the garlic powder and seasoned salt, try adding a pinch of smoked paprika for a deeper flavor, or some Italian herbs for a classic touch. A tiny dash of cayenne pepper can give it a nice kick if you're into that! You can even marinate your steak pieces for 15-20 minutes beforehand in a little soy sauce or Worcestershire sauce for an extra layer of umami. Just remember to pat them dry before adding to the foil pack to get a better sear if you’re using other cooking methods. Speaking of cooking methods, while the oven is fantastic, these 'steak pockets' truly shine on the grill or even over a campfire! Imagine the delicious, smoky flavor infused into your steak and potatoes. If you're grilling, preheat your grill to medium-high heat (around 400°F). Place the foil packs directly on the grates and cook for about 20-30 minutes, flipping halfway through, or until the potatoes are tender and the steak is cooked to your desired doneness. For a campfire, place them on hot coals, turning frequently, for a similar amount of time. It's camping food elevated, and the individual 'pockets' make serving a breeze – no plates needed! To ensure your steak pockets turn out perfectly every time, here are a few tips I've picked up. First, don't overcrowd your foil packs. Give the ingredients a little room to breathe and cook evenly. Second, make sure your potatoes are diced fairly uniformly, so they all cook at the same rate. If some are too big, they might still be hard when the steak is done. Third, always double-wrap your foil packs, especially if you're grilling or using a campfire. This prevents any leaks and keeps all those delicious garlic butter juices locked in. Finally, the best way to check for doneness is to carefully open one pack and test a potato with a fork – if it’s tender, you’re good to go! And let's talk veggies! Broccoli is great, but don't limit yourself. I often throw in sliced bell peppers, onions, mushrooms, or even some corn kernels. Green beans or asparagus also work wonderfully. Just make sure to cut any harder veggies into smaller pieces so they cook through at the same time as the potatoes. This is such a customizable meal; you can literally use whatever fresh produce you have on hand. These 'steak pockets' are also fantastic for meal prep. You can assemble them ahead of time, store them in the fridge, and then just pop them in the oven or on the grill when you're ready to eat. It saves so much time during the week! Trust me, once you try these garlic butter steak and potato foil packs, they'll become a regular in your dinner rotation. They’re simply delicious, incredibly convenient, and so much fun to make!
