•1 head cauliflower, cut into 1 inch pieces

• 2 tbsp olive oil

• 2 tsp Italian seasoning

• 1/2 tsp salt

• 1/4 tsp pepper

• marinara sauce

• 2 cups shredded mozzarella

• 2 oz pepperoni slices

1) spread cauliflower into a 9x13 pan and toss with olive oil, italian seasoning, salt, and pepper.

2) roast in 425 F degree oven for 25 minutes, until tender

3) pour marinara evenly over cauliflower and sprinkle with cheese. arrange pepperoni on top

4) place back in oven for 10-15 min, until cheese is melted and golden brown
