SWEET POTATO WAFFLE BURGER 🍔
Ingredients:
1/4 medium sweet potato, grated
1 tsp corn flour
1 tbsp egg white
1 tsp paprika
140g extra lean beef mince
1 tsp taco seasoning
40g high protein cottage cheese
10g honey
1 tsp chilli flakes
1 tbsp mashed avocado
Method:
Preheat oven to 100 degrees celsius
Grate the sweet potato and drain excess liquid
Place in a bowl and add corn flour, egg white, paprika and toss to coat
Place half the mixture into the non stick waffle maker. Press hard so it fully closes and cooks for around 2 minutes. Checking to see when ready as each waffle maker is different. Repeat with second. Place in the oven to keep warm for 5 minutes while you cook the beef
Combine the beef with the taco mince and roll into a ball
Cook the beef patty in a pan on high heat by placing the ball in the middle of the pan and pressing down to create a circle shape. Cook on either side for 2.5 minutes
Assemble the burger with one sweet potato waffle followed by cottage cheese, honey, chilli flakes, the burger patty and then spread the avocado on the remaining sweet potato to press down
