* 1 Sliced fresh tomatoes

* handfull Fresh spinach, chopped

* 3 Eggs, whisked (seasoned with red pepper flakes)

* 1 large flour tortilla

* Shredded cheese (a Mexican blend or similar)

* 2tbsp Canned tuna

* Red onion, thinly sliced

* 1tbsp Chili oil or chili crisp

* Fresh cilantro, chopped (for garnish)

* Dipping sauce of choice (e.g., a spicy mayo or aioli)

Instructions:

1. **Sauté Tomatoes:** Heat a non-stick pan over medium heat. Place the tomato slices in the pan and sear them for a minute or two on each side.
