1-dice one whole onion, 4 to 6 bell peppers, 2-3 tomatoes (tomatoes, optional, I added extra)
2-sauté in a little bit of salt and oil until vegetable softened
3-add ground beef till browned
4- add 6 cups water, one can tomato sauce, one can diced tomato
5-add 6 to 8 beef bullion cubes (this is entirely up to you on how beefy you want it. I normally put 6 to 7)
6-stir, bring to boil, let simmer for 5 to 10 minutes
Add to white rice and enjoy!
Stuffed pepper soup is a perfect comfort dish for chilly evenings. This recipe features fresh bell peppers, which are rich in vitamins C and A, along with tomatoes and ground beef for a nourishing flavor profile. The combination of beef bouillon cubes adds depth to the broth, making it taste exceptionally hearty. For those who prefer a vegetarian version, you can substitute ground beef with lentils or plant-based meat, and use vegetable broth instead. Don't forget to incorporate your favorite spices to enhance flavor. This soup is also great for meal prepping; it yields several servings that can be stored in the fridge for easy reheating throughout the week. Serve it over a bed of white rice for added texture and heartiness. To save time, consider using pre-diced vegetables or frozen bell pepper mixes. Embrace the warmth and satisfaction of this delightful soup, perfect for family dinners or a cozy night in!
