Okay, I know this soup may not look the most appetizing 😂 but BOY is it FULL of flavor! This is one of those recipes that may not win a beauty contest, but it absolutely wins on taste. 🤤
And the best part? ONE POT! 🙌
note: This is a family recipe that my mom passed down and taught me to cook!
We make this soup year-round—even on those sweltering summer days! It’s that good. ❤️
✨ Ingredients:
• 6–7 bell peppers, diced
• ½ large onion or 1 small onion, diced
• Vegetable oil, enough to coat the vegetables
• 1 lb ground beef
• 1 can tomato sauce
• 1 can petite diced tomatoes (DO NOT drain)
• 4 cups water
• 4–6 beef bouillon cubes (depending on how strong you want the flavor)
• Salt to taste
• White rice, for serving
⚠️ Make sure you use a VERY large pot or soup pot because this makes a good amount!
🍲 Instructions:
1️⃣ Add your diced peppers, onion, and enough vegetable oil to coat the vegetables to your pot. Cook until the vegetables soften.
2️⃣ Add the ground beef and cook until completely browned and cooked through, mixing everything together.
3️⃣ Add 4 cups of water, tomato sauce, diced tomatoes with the juice, and your beef bouillon cubes. Stir everything together.
4️⃣ Let the soup simmer for about 5–10 minutes.
5️⃣ Taste and add salt as needed.
6️⃣ Serve over a bowl of fluffy white rice and ENJOY! 🤤🍚
