Muddy buddies with WIC items!
Hey there! I wanted to show you guys this recipe I make with some of my Wic approved items. Every month I get about 5-7 big boxes of cereal. Half the time the cereal would go stale and be wasted by the time the new benefits were added on to the card. We don’t like to waste food so I started doing different recipes to try and utilize all the benefits I receive each month with nothing going to waste. Today I am making Peanut butter chocolate muddy buddies. My kids love these and eat them so quick. The Wic ingredients I’m going to be using for this recipe is 1 whole box of Chex mix. I used the cinnamon Chex mix for this recipe but you can use plain Chex mix cereal as well, I also used 3/4 cup creamy peanut butter that is Wic approved. The other ingredients I used are 1/2 a stick of unsalted butter, 1 1/2 cups of semi sweet chocolate chips, a pinch of salt, and 2 cups of powdered sugar and a teaspoon of vanilla extract. U can get all those ingredients here for around $10 different states may be more or less. In a small pot I added the chocolate, butter, salt, and peanut butter together and heated on medium heat stirring constantly until everything was melted together I then took it off the heat and added the teaspoon of vanilla extract. In a big bowl I emptied the entire box of Chex mix into it and poured over the chocolate peanut butter mixture on top. You then will gently fold the mixture all over the cereal trying to evenly coat all the pieces. Next in a large container with a lid (you can use a zip lock bag if you prefer) I added 1 cup of the powdered sugar and half the chocolate covered cereal and shook it up until all the cereal was all coated and put it into a clean bowl, I then did the same thing with another cup of powdered sugar and the rest of the cereal. Muddy buddies will stay fresh for up to 1 week stored in an air-tight container at room temperature or can be frozen for up to 2 months. But these never last more than a day or two in my home.
