Easy 45 minute Pho 🍜🙂

Ingredients:

1 Rotisserie Chicken

2 white onions

1 large Ginger

Sugar or Small piece of rock sugar

1/4 cup of Fish sauce

4 quarts of water

1 Pho Spice packet

Rice noodles

Toppings:

Hoisin

Siracha

Thinly sliced White onion

Limes

Jalapeños

Bean Sprouts

Thai Basil

first, cut one onion and ginger in half and place on a baking pan. Place in the oven to broil for 5ish minutes to bring out the flavors (keep an eye so you don’t burn it). Next, start removing the meat from your rotisserie chicken while saving the bones. Add four quarts of water to a large pan and add the chicken bones, toasted onion and ginger. Prior to adding the pho spice packet to the pot, toast them in a pan and put them into a spice bag. Toasting them will help bring out the flavors! Next add your sugar and fish sauce. Bring your pot to a boil then turn the heat down and let it simmer on low for 45 minutes.

While your pho broth is simmering cook your rice noodles according to directions on the package.

Two things I get asked about most are the rice noodles and, surprisingly, how to best use jalapeños in pho. Trust me, getting these right makes all the difference! When it comes to pho, the rice noodles are just as important as the broth. The original recipe mentions cooking them according to package directions, but I've learned a few tricks that make them absolutely perfect every time. First, the type of rice noodle matters! For pho, you usually want flat, wide rice noodles. I personally prefer fresh ones if I can find them, but dried ones work perfectly too. The key is never to overcook them. They should be tender but still have a slight chew—al dente, if you will. I usually soak my dried rice noodles in hot (not boiling) water for about 15-20 minutes, then give them a quick dunk in boiling water for just 30-60 seconds right before serving. This brief boil heats them through without making them mushy in the hot broth. Rinsing them with cold water immediately after cooking also helps stop the cooking process and keeps them from sticking together. Imagine diving into a bowl of pho with perfect, slippery rice noodles – it's heaven! Now, about those jalapeños! They might seem like a simple topping, but they add such a fantastic, fresh kick to your pho. The OCR even picked up on them being a key ingredient in a finished bowl, and for good reason! Most people just slice them thinly and add them raw, which is great. I love how the heat slowly infuses into the hot broth, adding layers of flavor. If you want less heat, you can easily remove the seeds and membranes before slicing. For an extra aromatic punch and a bit more heat distributed throughout, I sometimes muddle a few slices at the bottom of my bowl before adding the hot broth – it releases more of their essential oils. Another tip: don't be shy about pairing them with other fresh pho toppings like crisp bean sprouts, fragrant Thai basil, and a squeeze of fresh lime. The combination is just divine. The heat from the jalapeños cuts through the richness of the broth and perfectly complements the hoisin and sriracha sauces you might drizzle on top. Speaking of toppings, having a variety prepped, as seen in the images, truly makes the experience. Freshly sliced white onion adds a sharp contrast, and a generous handful of Thai basil and cilantro brightens everything up. Don't forget those limes – a squeeze of fresh lime juice can awaken all the flavors.
