How do you deal with no space?

I live in an apartment in Nyc. Very little countertop space an inch on one side and other side full of stuff like dish dryer and other stuff. I have a kitchen table and an island but i hate always going back and forth. I sometimes put a cutting board over the sink that helps but this is normal to me and I’ve been doing this for many years now.

get a foldable rolling cart, working in food service we barely have counter spade ws well and then we just roll out a table or unfold a table and then boom! more room when needed. then u can pack away for when u dont need it
