Tomato Pesto Flatbread Pizza

1 piece lavash bread or flatbread

2 t EVOO

1/3 c parmigiano reggiano, freshly grated

4 oz mozzarella pearls

3 Campari tomatoes, thinly sliced & patted dry

1/4 t Italian seasoning

Salt to taste

1/4 c basil pesto

1. Preheat oven to 425° in line a baking sheet with parchment paper.

2. Once the oven is preheated place the lavish bread onto the prepared pan and drizzle the EVOO on top. Sprinkle parmigiano reggiano evenly on lavash, then add mozzarella pearls, Campari tomato slices, Italian seasoning, salt, and basil pesto on top.

3. Bake for 10 to 13 minutes or until the edges of the lavash are slightly browned.

4. Remove from the oven let cool 2-3 minutes.

5. Slice into eight pieces and serve immediately.
