DIY Caramel Churro Drizzled Cheesecake Bars

These bars are the perfect combo of crunchy graham cracker crust, creamy cheesecake, a caramelized cinnamon-sugar topping, and a drizzle of homemade caramel. Think churros, but make it cheesecake magic!

Ingredients

For the Crust:

• 1 ¼ cups graham cracker crumbs

• 6 tablespoons melted butter

• ¼ cup granulated sugar

• ½ teaspoons cinnamon

• (extra cinnamon to sprinkle on top)

For the Cheesecake Layer:

• 16 oz (2 blocks) cream cheese, softened

• ½ cup granulated sugar

• 1 large egg

• 1 teaspoon vanilla extract

For the Caramel Sauce:

• 1 cup granulated sugar

• 6 tablespoons unsalted butter (room temp)

• ½ cup heavy cream (room temp)

• ¼ teaspoon vanilla extract

For the Topping:

• ¼ cup granulated sugar

• 1 teaspoon cinnamon

How to Make Them

1. Make the Crust:

• Preheat your oven to 350°F.

• In a bowl, mix graham cracker crumbs, sugar, cinnamon,and melted butter until combined.

• Press the mixture into a square pan lined with parchment paper.

2. Prepare the Cheesecake Layer:

• In a bowl, beat cream cheese, sugar, egg, and vanilla until smooth and creamy.

• Pour the cheesecake mixture over the crust and spread evenly.

• Bake for 25 minutes at 350°F. Let it cool completely, then place it in the fridge or freezer to chill.

3. Make the Caramel Sauce:

• Heat sugar in a medium pot over medium heat, stirring occasionally until it melts and turns golden.

• Add butter, stirring constantly as it bubbles.

• Slowly pour in heavy cream while stirring; it will bubble again, so keep whisking until smooth.

• Remove from heat and stir in vanilla. Let cool for 10-15 minutes.

4. Add the Topping:

• Sprinkle the chilled cheesecake with cinnamon-sugar.

• Use a torch to caramelize the sugar, or place it under the broiler for a few seconds until golden.

5. Finish and Serve:

• Cut into bars and drizzle generously with caramel

sauce.
